BREADED NOODLES - Oma Meyer recipe for using up leftovers. Any noodle will do.
Any noodle will do, but instead of making a small amount of toasted breadcrumbs as a dressing for noodles, as my mother did, I make it intentionally, with lots of noodles and lots of topping. Can be eaten as a main dish or used as a side dish.
Ingredients:
approx 1/2 lb dry noodles
approx 1/2 stick butter
approx 1 tsp salt
Directions:
boil noodles and drain
melt butter in pan, add salt and breadcrumbs and brown
pour mixture over noodles and mix well
cut noodles
p.s. - Oma *never* used that much butter, she made a small amount of butter and breadcrumbs and used it as a topping. I increased the butter, breadcrumbs, and salt and now these noodles make a meal unto themselves.
